That being said, I have included 10 easy, fast, and affordable recipes for your instant pot. 

I never said they’re all healthy and good for you…But they are delicious!

I won’t bore you with details on how much my family loves each of these recipes or why I decided to make it (although my family does love every one of these).

You would just skip right past that anyways. 😉

Baked Potatoes

Love eating baked potatoes, but hate waiting on them to cook in the oven? Well, you're in luck! Baked potatoes can be cooked in your Instant Pot in less than an hour!

What you need...
 6 baking potatoes (large russet potatoes)
 salt & pepper
 1 cup water

What to do...
1

Clean all of your baking potatoes

Poke holes all over baking potatoes

Pour 1 cup of water into your Instant Pot

5

Grab your clean, holey potatoes and put them in your pot

6

Put the lid on the Instant Pot and set valve to SEALING

7

Set PRESSURE COOK to 20 minutes (you may want to add 5 or 10 minutes for bigger potatoes). The pressure will take a while to build, but once it does, the timer will start to count down.

When you hear the beep indicating it is finished, turn the valve to VENTING to quick release the pressure (BE VERY CAREFUL AS THE STEAM IS VERY HOT!)

Potatoes are ready to eat. Grab your toppings (sour cream, butter, bacon, green onion) and ENJOY!

Instant Pot Baked Potatoes

Instant Pot Roast Beef, Potatoes, and Carrots

What you need...
 2 lbs Roast Beef Chuck
 3 sticks Celery
 8 Baby Red Potatoes (or 5 regular potatoes, cut in quarters)
 1 lb Baby Carrots (Less cutting!)
 1 Onion (you can find this already diced in produce section, just sayin')
 1 tsp Minced Garlic (you can also do without this as well)
 1 tsp Thyme (not required. I never have this on hand)
 Salt and Pepper
 3 tbsp Cornstarch
 2 tbsp Butter
 1 cup Beef Broth
 3 tbsp Water

What to do...

Spray your Instant Pot inner pot with non-stick spray

Select SAUTE

Melt 2 TBSP of butter in pot

While butter is melting, rub salt and pepper on beef and add to pot

5

Cook 4 minutes on each side to brown the beef and transfer to a plate or bowl

Add onions to pot and cook for about 3 minutes, then stir in 1 cup of broth

7

Select CANCEL

8

Add baby carrots, diced celery (3 stalks), potatoes, and any seasonings you may want, such as Thyme, or even a package specifically made for Roast Beef in the "seasonings" department of your local grocery store

Stir all of that together, and add beef back to pot

Cover with instant pot lid. Make sure it is secure

Set pressure valve to SEALING

Select MANUAL, or PRESSURE COOK and set time for 45 minutes

When finished, turn valve CAREFULLY to VENTING and quick-release the pressure

Remove beef and put it on whatever you're serving on

In a bowl, beat water and cornstarch

Select SAUTE

Heat liquid already in pot until it is simmering

Slowly add cornstarch mixture to pot

Continue stirring for 1 to 2 minutes until thickened

Cancel, AND SERVE

This is one of my favs! It's so easy, and so yummy. It also makes a fantastic breakfast the next day (I can never wait until my lunch break to eat it). You can add your own flavor and ingredients to this meal to make it your own. You have to try this one!

What you need...
 2 lbs smoked sausage or kielbasa, cut .75-inch thick
 5 potatoes, cut in quarters
 8 oz shredded cheddar cheese
 2 tsp cajun or creole seasoning
 Salt & Pepper
 0.50 cup water

What to do...
1

Spray your inner pot with non-stick spray

Throw in cut up sausage, cut up potatoes, and 1/2 cup water

3

Add cajun or creole seasoning, along with salt and pepper

4

Put lid on Instant Pot and set valve to SEALED

5

Hit PRESSURE COOK and cook for 8 minutes

Once you hear the beep to indicate it is finished, do a quick release by turning valve to VENTING (DO THIS VERY CAREFULLY AS STEAM IS VERY HOT!)

Once it is done venting, add cheese on top, and put lid back on Instant Pot.

 1 lb frozen shrimp, ready to eat (keep a little frozen)
 6 baby corn, frozen
 8 baby red potatoes (or 5 regular potatoes cut in quarters)
 3 tsp Cajun or creole seasoning
 3 cups water

What to do...
1

Place potatoes, sausage, and corn into Instant Pot (DO NOT ADD SHRIMP YET)

Pour in water

Sprinkle 2-3 TSP seasoning on ingredients

Put lid on Instant Pot, and set valve to SEALING

Set Instant Pot to PRESSURE COOK, and set timer for 4 minutes (once the pressure builds, the timer will start to count down)

Once you hear the beep to indicate it is finished, set valve CAREFULLY to VENTING and quick release the pressure (the steam WILL burn you. PLEASE do this step very carefully, and do not have your face or hands near the steam release)

Now, add your shrimp to the Instant Pot (you can take corn out if you need to make room)

Instant Pot Beef Stew

This time of year is the perfect time of year for comforting, delicious beef stew. Try this easy-to-do beef stew recipe that will satisfy those taste buds!

What you need...
 1.50 lbs beef stew meat, (already cut up)
 1 lb baby carrots (no cutting)
 5 potatoes, cut in quarters
 3 sticks celery, diced
 1 onion, diced (you can find onion already diced in produce section)
 3 cloves garlic (not required-can get already minced in jar-follow directions on jar for amount needed)
 1 can tomato sauce
 2 tbsp worcestershire sauce
 1 tbsp olive oil
 32 fl oz beef broth
 2 tbsp water
 salt and pepper
 1 tsp italian seasoning
 2 tbsp cornstarch

What to do...
1

Turn on SAUTE function, and add 1 TBSP olive oil

When oil is hot (which will happen very quickly), add your meat to Instant Pot

3

Season meat with salt, pepper, and italian seasoning.

4

Cook meat until browned on all sides.

5

Add 32 oz beef broth to pot and scrape up bits with a large spoon (not metal of course)

6

Now, add 2 TBSP Worcestershire sauce, garlic, 1 can tomato sauce, diced onion, the whole bag of carrots, and all of your cut up potatoes.

Put lid on Instant Pot and make sure valve is set to SEALED

8

Hit PRESSURE COOK, and set timer for 35 minutes (this will take a little while to build pressure- Timer does not start until pressure builds)

9

Once you hear the beep to indicate it is finished cooking, allow to naturally release for about 10 minutes

After 10 minutes is up (timer will say LO: 10), you can turn valve to VENTING (DO THIS VERY CAREFULLY AS STEAM IS VERY HOT)

Mix together 2 TBSP of water and 2 TBSP of cornstarch and stir in stew until thickened.

Serve in a bowl with rolls (for easy) or cornbread (if you feel like whipping up some Jiffy). ENJOY!

 3 cloves minced garlic
 1 sweet onion
 1 lime, juiced
 1 envelope taco seasoning (any brand will do)
 small tortillas (about 6 in.)
 topping (ex: sour cream)

What to do...
1

Spray your inner pot with non-stick spray

Sprinkle chicken with taco seasoning

What you need...
 2 lbs ground beef
 6 potatoes, cut in quarters
 1 onion
 1 egg
 2 tbsp dijon mustard (not required)
 0.25 cup ketchup
 2 tbsp light brown sugar (not required)
 1.50 tsp salt
 0.50 cup panko breadcrumbs
 4 tbsp butter
 1 cup milk
 2 cups water
 1 large piece of aluminum foil

What to do...
1

Grab a large bowl and mix the following ingredients together:

1. Beef
2. Breadcrumbs
3. Milk
4. Onion
5. Egg
6. Salt

Shape into 4 by 6 loaf, and put into a disposable loaf pan, or a round cake pan. Set Aside.

Combine potatoes, water, and salt in the Instant Pot inner pot. Place trivet over the potatoes.

(Don't have a trivet (steamer rack)? Here you go!)

Fold aluminum foil and place under the meatloaf pan (to be able to get loaf in and out of Instant Pot safely)

Set PRESSURE COOK time to 35 minutes- Go ahead and preheat your oven to 400 degrees.

Stir together ketchup, brown sugar, and mustard to go on the meatloaf (some people prefer ONLY ketchup, and that's okay as well!)

When you hear the beep indicating it is finished cooking, allow to naturally release for 10 minutes.

When 10 minutes is up (it'll say LO:10), then turn the valve to VENTING and release the remaining pressure (VERY CAREFULLY!! STEAM IS HOT)

What you need...
 1 lb chicken tenders (optional)
 1 lb rotini pasta (or penne)
 16 oz shredded cheddar cheese
 1 cup frozen broccoli (I buy steamer broccoli and then stir in at the end) 🙂
 1 cup milk
 4 cups water

What to do...
1

Pour 4 cups of water AND pasta into your Instant Pot

** If you are not going to use steamed broccoli, then you would put 1 cup frozen broccoli in a steamer on top of pasta.

Make sure the valve is set to SEALED. PRESSURE COOK for 4 minutes

Turn the valve to VENTING and quick release the pressure (BE VERY CAREFUL AS STEAM IS VERY HOT!)

While the Instant Pot is releasing pressure, throw your steamed broccoli into the microwave and follow the instructions (usually take about 2 minutes)

When the pressure is done releasing, turn on the SAUTE function of your Instant Pot.

Pour in 1 cup of milk and the whole 16 oz bag of shredded cheese (YUM). Stir until the cheese is melted. Stir in cooked broccoli if you steamed it in microwave.

NOTE: If you wanted chicken, then you could throw it in at this point. I forgot to actually cook chicken tenders one time, and I used microwavable, boneless, naked chicken wings (fully cooked) and it turned out to be pretty darn delicious!)

 1 lb rotini pasta (or penne)
 16 oz shredded cheddar cheese
 1 cup frozen broccoli (I buy steamer broccoli and then stir in at the end) 🙂
 1 cup milk
 4 cups water

Directions

What to do...
1

Pour 4 cups of water AND pasta into your Instant Pot

** If you are not going to use steamed broccoli, then you would put 1 cup frozen broccoli in a steamer on top of pasta.

Turn the valve to VENTING and quick release the pressure (BE VERY CAREFUL AS STEAM IS VERY HOT!)

While the Instant Pot is releasing pressure, throw your steamed broccoli into the microwave and follow the instructions (usually take about 2 minutes)

When the pressure is done releasing, turn on the SAUTE function of your Instant Pot.

Pour in 1 cup of milk and the whole 16 oz bag of shredded cheese (YUM). Stir until the cheese is melted. Stir in cooked broccoli if you steamed it in microwave.

NOTE: If you wanted chicken, then you could throw it in at this point. I forgot to actually cook chicken tenders one time, and I used microwavable, boneless, naked chicken wings (fully cooked) and it turned out to be pretty darn delicious!)

Instant Pot Broccoli and Cheddar Pasta

Baked Ziti Pasta

Pasta is comfort food for sure, and this recipe does NOT disappoint! Try the Instant Pot Baked Ziti for a meal that you and your whole family will love!

What you need...
 8 oz Ziti pasta (or something similar)
 1 onion, chopped (can find already chopped in produce department)
 3 cups crushed tomatoes, UNdrained
 1 tbsp olive oil (or whatever you have on hand-Maybe less oil if not olive oil)
 1 tbsp butter
 1 egg
 1 cup ricotta cheese
 8 oz shredded mozzarella
 0.25 cup grated parmesan cheese
 2 cloves of garlic (not required)
 0.50 tsp italian seasoning
 1 tsp sugar
 salt & pepper
 2 cups water

Turn on the SAUTE function of Instant Pot.

Add olive oil and butter and saute onions until translucent

Add in:

1. Garlic
2. Tomatoes
3. Sugar
4. Seasonings

Cook 5 minutes

Add water and 2 cups of water to tomato sauce. Cook for about 10 to 15 minutes, or until pasta is tender.

Pre-heat oven to 500 degrees.
In a separate bowl, combine:

1. Ricotta cheese
2. Mozzarella cheese
3. Parmesan cheese
4. Egg

Add a little salt. Take HALF and stir into pasta. The remaining goes on top of the mixture.

Transfer the mixture to a casserole dish and put it in a preheated oven for about 5 minutes.

Serve and ENJOY.

You gotta love chicken! You can do so much with it, including Chicken and Yellow Rice. Full of flavor and will become a frequent request in your household. You must try it!

 1 lb chicken breast, cut into strips (or buy chicken tenders)
 1 yellow onion, diced (you can buy them frozen or already diced)
 1 cup frozen peas and carrots
 1 cup frozen corn
 2 cups jasmine rice
 1 tbsp olive oil
 2 pkgs of Goya Sazon seasoning (comes in a box)
 3 cups chicken broth

What to do...

Add olive oil, and cook onions until they're translucent

Add in the following ingredients:

1. Chicken broth
2. Rice
3. Peas and carrots
4. Corn
5. Sazon seasoning

Instant Pot Chicken and Yellow Rice

 

Alright! So, that’s it! Trust me when I say that these recipes will make your life EASIER!

If you’re looking at ONLY cooking time, they aren’t all the quickest, per say.

But if you’re looking at your time spent cooking it, well we have ourselves at least 10 winners in that category!

I use an Instant Pot because I work 40 hours a week, and then I spend at least 10 hours a week doing drop-off and pick-up with my kids. That’s not including weekly gymnastics and ballet (and soon to be horseback riding lessons). 

I love being busy taking care of my family. Don’t think I am complaining, please.

But cooking is:

A. Not something I enjoy

and

B. Not something I necessarily have time for

So, the Instant Pot has been my lifesaver, and it can be yours as well!

I love a good crockpot meal, don’t get me wrong! (recipes to come at a later date)

But I never remember to get my crockpot ready in the morning!

And anyway, my Instant Pot has a crockpot setting, so I’m set either way and so are you if you made the investment. 😉
