What you need...
 1.50 lbs Ground Beef (or deer)
 2 cans (14.5 oz) dark red kidney beans
 2 cans (14.5 oz) light red kidney beans
 1 can rotel tomatoes (you pick if you want mild or original)
 1 can stewed tomatoes
 1 packet of chili seasoning (you pick if you want mild, original, or HOT)
 46 fl oz tomato juice (BIG can- any brand will do)
 1 onion (you can buy them already diced)-optional
 shredded cheese (for topping)
 fritos or crackers
 dollop of sour cream (topping)

What to do...

Brown the meat and onions until meat is no longer pink and onions are soft

While your meat is cooking, pour beans into a colander and rinse them off. Set aside.

Add chili seasoning to your meat and stir

Pour the UNDRAINED rotel tomatoes and stewed tomatoes into the pot

Add rinsed beans

Get your huge can of tomato juice and pour it into the pot. YOU WILL NOT USE THE WHOLE CAN (more than likely). I usually pour until it just covers the top of the other ingredients. Stir and see how it looks. You don't want it too watery.

*NOTE: If you prefer a "thicker" chili, then stop just before covering the ingredients

Once stirred, set your burner to MEDIUM-LOW and let it cook for about 15 minutes

After 15 minutes, stir your chili, set the burner to LOW/SIMMER, and let it simmer for another 15 minutes (or longer if you prefer)

Turn the burner off (let it cool if necessary), pour a bowl, add your fritos or crackers and cheese (and maybe a dollop of sour cream like me) and ENJOY!

* IDEA: You can make this on a Thursday night, and use your leftovers for chili dogs on Friday night (because aren't we all exhausted by Friday night!?)

Busy, but BLESSED. Yep, that's me! My name is Jesica (yes, one 's') and I am a wife of a gorgeous, loving husband, a mom of three fantastic, beautiful girls (as well as a HUGE German Shepherd and an adorable chocolate lab).
