This time of year is the perfect time of year for comforting, delicious beef stew. Try this easy-to-do beef stew recipe that will satisfy those taste buds!

What you need...
 1.50 lbs beef stew meat, (already cut up)
 1 lb baby carrots (no cutting)
 5 potatoes, cut in quarters
 3 sticks celery, diced
 1 onion, diced (you can find onion already diced in produce section)
 3 cloves garlic (not required-can get already minced in jar-follow directions on jar for amount needed)
 1 can tomato sauce
 2 tbsp worcestershire sauce
 1 tbsp olive oil
 32 fl oz beef broth
 2 tbsp water
 salt and pepper
 1 tsp italian seasoning
 2 tbsp cornstarch

What to do...

Turn on SAUTE function, and add 1 TBSP olive oil

When oil is hot (which will happen very quickly), add your meat to Instant Pot

Season meat with salt, pepper, and italian seasoning.

Cook meat until browned on all sides.

Add 32 oz beef broth to pot and scrape up bits with a large spoon (not metal of course)

Now, add 2 TBSP Worcestershire sauce, garlic, 1 can tomato sauce, diced onion, the whole bag of carrots, and all of your cut up potatoes.

Put lid on Instant Pot and make sure valve is set to SEALED

Hit PRESSURE COOK, and set timer for 35 minutes (this will take a little while to build pressure- Timer does not start until pressure builds)

Once you hear the beep to indicate it is finished cooking, allow to naturally release for about 10 minutes

After 10 minutes is up (timer will say LO: 10), you can turn valve to VENTING (DO THIS VERY CAREFULLY AS STEAM IS VERY HOT)

Mix together 2 TBSP of water and 2 TBSP of cornstarch and stir in stew until thickened.

Serve in a bowl with rolls (for easy) or cornbread (if you feel like whipping up some Jiffy). ENJOY!

Busy, but BLESSED. Yep, that's me! My name is Jesica (yes, one 's') and I am a wife of a gorgeous, loving husband, a mom of three fantastic, beautiful girls (as well as a HUGE German Shepherd and an adorable chocolate lab).
