What you need...
 2 lbs ground beef
 6 potatoes, cut in quarters
 1 onion
 1 egg
 2 tbsp dijon mustard (not required)
 0.25 cup ketchup
 2 tbsp light brown sugar (not required)
 1.50 tsp salt
 0.50 cup panko breadcrumbs
 4 tbsp butter
 1 cup milk
 2 cups water
 1 large piece of aluminum foil

What to do...
1

Grab a large bowl and mix the following ingredients together:

1. Beef
2. Breadcrumbs
3. Milk
4. Onion
5. Egg
6. Salt

Shape into 4 by 6 loaf, and put into a disposable loaf pan, or a round cake pan. Set Aside.

Combine potatoes, water, and salt in the Instant Pot inner pot. Place trivet over the potatoes.

Fold aluminum foil and place under the meatloaf pan (to be able to get loaf in and out of Instant Pot safely)

Place meatloaf on top of trivet

Put lid on Instant Pot and secure. Make sure the valve is on SEALING

Set PRESSURE COOK time to 35 minutes- Go ahead and preheat your oven to 400 degrees.

Stir together ketchup, brown sugar, and mustard to go on the meatloaf (some people prefer ONLY ketchup, and that's okay as well!)

When you hear the beep indicating it is finished cooking, allow to naturally release for 10 minutes.

When 10 minutes is up (it'll say LO:10), then turn the valve to VENTING and release the remaining pressure (VERY CAREFULLY!! STEAM IS HOT)

Once pressure releases, carefully take the meatloaf out of the Instant Pot (there will be a lot of juices) and drain fat & juices. Add your glaze to the meatloaf, and bake for 8 minutes.

Once the meatloaf is out of the pot, add milk and butter to your potatoes (and whatever else you prefer to put in your mashed potatoes), stir, and mash the potatoes until your heart's content.

Busy, but BLESSED. Yep, that's me! My name is Jesica (yes, one 's') and I am a wife of a gorgeous, loving husband, a mom of three fantastic, beautiful girls (as well as a HUGE German Shepherd and an adorable chocolate lab).
